Grain Salad with Radish & Feta

Instructions

Combine cooked wheat berries, thinly sliced radishes and blanched fresh peas. Make a dressing of olive oil, red wine vinegar, minced garlic scapes, salt and pepper.

Toss with the salad and finish with plenty of crumbled feta cheese and toasted pepitas.

  • Wheat berries, cooked
  • Thinly sliced radishes

  • Feta cheese, crumbled
  • Toasted pepitas (pumpkin seeds)
