Gorda Eats: A Puerto Rican Dinner
In 2014, two-years after I graduated culinary school, I had done my fair share of working in bakeries and French-centric restaurants. Culinary school proved no respite from the Euro-centric world of food, although I'm sure they'd like to think otherwise, and my mind was on the Southeast Asian flavors of my neighborhood friends and the Puerto Rican flavors of my family. I soon started to document and recreate the recipes of my grandmother and her mother and surely her mother's mother.
Come share a truly authentic Puerto Rican feast, with friends new and old. Prepared by a cook in the comfort of a homestyle setting, you will enjoy three courses including the following:
Bacalaitos | Codfish Fritters
Empanadas | Picadillo (seasoned ground meat with olives), inside a pastry shell.
Arroz con gandules | Rice with pigeon peas
Carne Guisada | Braised chicken in tomato sauce with olives
Brazo Gitano Cake | Pineapple, coconut cream, raspberry preserves, toasted coconuts, raspberries
